Yields: 12 cookies

Ingredients

  • 1 cup whole wheat flour 

  • 1 teaspoon baking powder 

  • 1/2 cup sugar 

  • 1/2 cup blueberries 

  • 3/4 cup Greek yogurt, plain 

  • 1 egg white 

  • 1/2 teaspoon lemon extract 

  • 1 lemon, zest

Directions

  1. In a food processor, combine egg white, yogurt, and lemon extract, then pulse until thoroughly combined. 

  2. Add sugar and continue pulsing.  

  3. Add remaining ingredients—except blueberries—and continue to pulse until thoroughly combined. 

  4. Transfer batter to a bowl and gently fold in blueberries. 

  5. Scoop into 12 equal-sized balls and place on a parchment-lined cookie sheet. 

  6. Bake in a preheated 375° oven for 12-14 minutes, until edges are slightly browned. 

  7. Remove from oven and allow to rest for 5 minutes before removing from cookie sheet.

  8. Transfer over to a cooling rack and allow to cool completely before serving.
