Yields: 12 cookies
Ingredients
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 cup sugar
- 1/2 cup blueberries
- 3/4 cup Greek yogurt, plain
- 1 egg white
- 1/2 teaspoon lemon extract
- 1 lemon, zest
Directions
- In a food processor, combine egg white, yogurt, and lemon extract, then pulse until thoroughly combined.
- Add sugar and continue pulsing.
- Add remaining ingredients—except blueberries—and continue to pulse until thoroughly combined.
- Transfer batter to a bowl and gently fold in blueberries.
- Scoop into 12 equal-sized balls and place on a parchment-lined cookie sheet.
- Bake in a preheated 375° oven for 12-14 minutes, until edges are slightly browned.
- Remove from oven and allow to rest for 5 minutes before removing from cookie sheet.
- Transfer over to a cooling rack and allow to cool completely before serving.
