Yield: 10 sliders
Ingredients
- Beef filet 1.5 lbs
- Slider buns 10 each
- Bacon jam (recipe and ingredients below)
- Bread and butter pickles 20 slices
- Horseradish aioli (recipe and ingredients below)
- Micro watercress
- Gruyere cheese sliced
Bacon Jam Recipe
- Bacon, cut into 1" pieces 1 lbs
- Onion, finely chopped 4 oz.
- Shallots, minced 2 oz.
- Cloves garlic, minced 2 oz.
- Brown sugar 2 oz.
- Maple syrup 3 oz.
- Apple cider vinegar 1 oz.
- Chili powder .5 tspB
- Brewed coffee 4 oz.
In a medium saucepan over medium heat, cook bacon until crispy. Transfer bacon to a paper towel-lined plate, reserving about a tablespoon of bacon fat in the pan. Reduce heat to medium-low. Add onion and shallots to the pan and cook, stirring often, until the onions are caramelized, about 15 minutes. Stir in garlic, brown sugar, maple syrup, vinegar, chili powder, coffee and cooked bacon. Bring mixture to a simmer then reduce heat to low. Cook until the liquid has reduced and thickened and the onions are soft, 7 to 10 minutes. Let cool.
Horseradish Aioli Recipe
- Prepared horseradish 2 oz.
- Dijon mustard 1 tsp.
- Mayonnaise 8 oz.
- Lemon juice .5 tsp.
- Chopped chives .5 tsp.
Mix all together.
Beef Filet Preparation
- Season filet with salt and pepper
- Heat oil in saute pan and sear filet on all sides
- Place filet in 350 degree oven and roast until internal temperature of 130 degrees
- Allow roast to rest for 15 minutes
- Slice filet 2 oz. portions
Assemble the Sliders
- Warm buns
- Working bottom to top: slice of cheese, filet, bacon jam, pickle, horseradish aioli, micro watercress and top bun
